
Macadamia granita
Preparation
Use a hand blender or food processor to purée the melon and the pineapple. In a small pan, heat the caster sugar, lime juice and 75 ml water until everything has dissolved. Add the melon and pineapple mixture and mix well in. Pour the mixture into a plastic container and place in the freezer. During the freezing process, stir the mixture with a fork every 30 min. to prevent the formation of ice crystals and to give the water ice a better texture. Keep in the freezer until serving, breaking it up a little with a fork. Serve the granita in an attractive glass and sprinkle on the chopped macadamias as topping.
