Couscous salad with peanuts and pistachios

Ingredients

  • 250 g couscous, instant
  • 4 tomatoes
  • 1 sweet pepper
  • 1 /2 cucumber
  • 3 tablespoons vinegar
  • 6 tablespoons olive oil
  • Salt and pepper
  • 200 g feta cheese
  • 100 g pistachios
  • 50 g peanuts, unsalted, chopped
  • 1 large onion
  • Basil
  • Black olives

Method

Allow couscous to swell. Dice the vegetables. Mix couscous and vegetables. Season the salad with salt, pepper and vinegar, add the olive oil. Fold in the nuts and the feta cheese. Garnish with black olives and basil.
