Macaroons with ground almonds

Ingredients

  • For the dough:
  • 180 Array
  • 300 g icing sugar
  • 145 g egg white
  • 40 g sugar
  • a little food colour as a paste
  • For the filling:
  • 200 g white or milk chocolate
  • (no coating)
  • 60 g cream
  • nuts or essence to taste
  • 60 g Sahne
  • nach Geschmack Nüsse oder Backaroma

Preparation:


1. Mix the ground almonds and the icing sugar, then sift with a sieve three times

2. Beat the egg white, then gradually add the sugar until the mass is firm, thereafter adding food colour if required

3. Add the almonds and the icing sugar to the egg white mixture in three portions, fill in an icing bag and squeeze onto a baking tray lined with baking paper so as to form circles

4. Allow the dough to stand for about 30 minutes

5. Bake the macaroons for 12-14 minutes at 140 °C (convection oven), then allow to cool on a cold surface

6. For the filling, melt chocolate, heat the cream and fold in Add chopped nuts, pistachios or essence to taste, allow to cool for a while and then place in the refrigerator until the filling has become firmer

7. Fill the macaroons with this mixture
