Cashewnoottortilla

Ingrediënten

  • 2 tortilla’s
  • 100 verse spinazie
  • 150 g feta, in blokjes gesneden
  • 3 lente-uitjes, in ringetjes gesneden
  • 50 gezouten cashewnoten, grofgehakt
  • versgemalen peper

Bereiding

Verwarm de oven voor op 200˚C.

Leg 1 tortilla op een met bakpapier beklede bakplaat. Leg de spinazie op de tortilla en verdeel hier bovenop de fetablokjes, de uiringetjes en de cashewnoten. Maak op smaak met versgemalen peper. Dek af met de andere tortilla en zet 10 min. in de voorverwarmde oven tot de bovenkant lichtbruin is.

Haal de tortilla uit de oven, snijd in vieren en serveer met wat gemengde salade.
