Currysoep met rivierkreeftjes en cashwenoten

Ingrediënten

  • olijfolie
  • 200 g Thaise roerbakgroenten
  • 1 el gele curry pasta of 3 el kerriepoeder
  • 400 ml kokosmelk
  • 2 blokjes visbouillon
  • 300 g rivierkreeftjes
  • 50 g cashewnoten

Bereiding

Verwarm een scheut olijfolie in een pan

Roerbak hierin de roerbakgroenten met de currypasta/kerriepoeder kort.

Voeg de kokosmelk, 1 l water en de blokjes visbouillon toe. Breng de soep zachtjes aan de kook.

Voeg als laatste de rivierkreeftjes toe en warm deze ± 2 minuten mee.

Schenk de soep in de kommen en strooi de cashewnoten erop.
