Indonesische paksoi met cashewnoten

Ingrediënten

  • 300 g reis blanke
  • 500 g Pak Choi (Bok Choi)
  • olijfolie
  • ½ wortel, in dun ruit gesneden
  • 100 g champignons en zwams
  • zout en peper
  • 1 kleine kop Boemboe (kruiden) voor Sajoer Tjampoer
  • 100 g cashews

Bereiding

Kook de rijst gaar volgens de aanwijzing op het pak. Was en snijd de paksoi in brede repen.

Doe een scheutje olie in een pan / wok en roerbak de paksoi samen met de winterpeen en paddestoelen in 2 min. knapperig. Voeg zout en peper toe. Roer er 1 dl water en de boemboe door, laat ca. 3 min. pruttelen.

Voeg de cashewnoten toe. Verdeel de rijst over de borden en schep het mengsel erop.
