Pikante paranotenmuffins

Ingrediënten

  • 175 g zelfrijzend bakmeel
  • 1 tl bakpoeder
  • ½ tl zeezout
  • 1 ei
  • 3/2 dl melk
  • 100 g zachte geitenkaas
  • 150 g magere spekreepjes
  • 50 g paranoten, fijngehakt
  • 10 sweet peppers, in stukjes gesneden
  • 2 lente-uitjes, in dunnen ringetjes
  • 2 tl Dijon mosterd
  • 2 à 3 tl Tabasco Rode Pepersaus
  • versgemalen peper en zout
  • 50 g belegen kaas, geraspt
  • kleine muffinvormpjes

Bereiding

Verwarm de oven voor op 200°C.

Meng in een kom het zelfrijzend bakmeel,

bakpoeder, zeezout, het ei en de melk.

Voeg de geitenkaas, spekreepjes, paranoten,

sweet peppers, lente-uitjes, mosterd en Tabasco

Rode Pepersaus erbij en meng alles goed door

elkaar met een spatel.

Vet de muffin (cake) vormpjes in en schenk

het beslag erin.

Strooi wat peper, zout en wat geraspte kaas erop.

Bak de muffins in het midden van

de voorverwarmde oven in ±25 minuten gaar.
