Salade van zalm met pistache-rucolapesto

Ingrediënten

  • 50 g gezouten pistachenoten, gepeld
  • 75 g rucola
  • 1 el citroensap
  • 2 teentjes knoflook
  • olijfolie
  • 4 kleine zalmfilets

Bereiding

Verwarm de oven voor op 220˚C op de grillstand.

Maak met de staafmixer of in de keukenmachine een pesto van de pistachenoten, 1 kopje rucola, citroensap, knoflook en een scheutje olijfolie.

Bak de zalmfilets onder de grill tot ze aan beide kanten bruin zijn en de gewenste gaarheid hebben.

Verdeel de overgebleven rucola over de borden, leg hierop de zalmfilets en serveer met een schep pesto.
