Couscous indian cu migdale

Ingrediente

  • 100 g mazăre verde
  • 2 cepe
  • 1 /2 dovlecel (zucchini)
  • 1 /2 ardei roşu
  • 1 /2 ardei galben
  • sare şi piper
  • 1 lingură de ulei de măsline
  • 300 g couscous (pachet)
  • 50 g stafide
  • 75 g migdale sărate, fărâmiţate
  • 3 linguri de coriandru, tocat mărunt

Preparare

Spălaţi toate legumele şi tăiaţi-le în cuburi.

Căliţi legumele timp de aproximativ 4 minute la temperatură înaltă în ulei de măsline, adăugând după gust sare şi piper. Acoperiţi stafidele în apă fierbinte, scuturându-le bine după aceea.

Între timp, preparaţi couscous-ul conform instrucţiunilor de pe pachet.

Puneţi couscous-ul într-un castron şi amestecaţi apoi legumele cu stafidele şi migdalele.

Presăraţi coriandru. Acest fel de mâncare este delicios servit fie rece sau cald.
