Supă de curry cu raci de râu şi alune de caju

Ingrediente

  • ulei de măsline
  • 200 g legume călite
  • 1 lingură de pastă curry sau 3 linguri de praf de curry
  • 400 ml lapte de cocos
  • 2 cuburi concentrate de peşte
  • 300 g raci de râu
  • 50 g alune de caju

Preparare

Încălziţi puţin ulei de măsline într-o tigaie şi căliţi sumar legumele, amestecând.

Adăugaţi laptele de nucă de cocos, 1 l de apă şi cuburile concentrate de peşte. Aduceţi supa treptat la punctul de fierbere.

La sfârşit adăugaţi racii de râu, asigurându-vă că aceştia sunt încălziţi bine prin încălzire timp de ± 2 minute.

Turnaţi supa în castroane şi presăraţi apoi alunele de caju.
